Cheesey Mixed Veg Casserole
16 oz frozen mixed veggies, any kind
1 can mushroom soup
1 cup mayo or sour cream
1 small onion, chopped
8 oz bag shredded cheese, any kind
handful cornflake crumbs or similar
1/4 cup butter or marg (I left this out)
Preheat oven to 350 and grease your small casserole dish or 4 by 5 pan.
Layer your veggies, the onion, and the mushroom mayo mixture. Sprinkle with half your cheese.
Repeat.
Top with your topping and the fat, if using it.
Bake (covered is okay) for half an hour.

this sounds really good and easy. what is '1 can mushroom soup'? how big, how many ounces, etc?
thanks a lot for always thinking to post recipes here. if I end up trying this I'll let you know (gotta think if it's worth risking having the kids throw it in my face.....)
