I have a bunch of frozen french fried thick sliced potatoes from school lunch program. I actually ran out of regular potatoes and cannot go shopping. Would I be able to use the frozen french fried potatoes instead of regular ones in my chulent? I would put them in right before shabbos.

It will probably be ok. Just keep your good base cholent and proceed.

I've done this before. Its fine. Not great. Not horrible. If you have a husband/relative/neighbor who can run out for you, Shipt or instacart or someone who can lend you a few potatos, that would be better.
We use a combination of the canned whole potatos (my kids love those) and real potatos, so we do both.
