Chocolate Chip Cookies - Levana Kirshchenbaum
2 eggs
3/4 cup sugar
3/4 cup dark brown sugar, packed
3/4 cup + 2 Tbsp oil
1 Tbsp vanilla extract
2 1/2 cups flour
3/4 tsp baking powder
3/4 tsp baking soda
1/8 tsp salt
1 1/2 cups good quality mini chocolate chips
Preheat oven to 375ºF.
Wisk together the eggs and sugars. Add the oil and vanilla and mix in thoroughly. Add the flour, baking powder, baking soda, and salt until just combined. Fold in the chips.
Drop the cookies in heaping teaspoonfuls (use a cookie scooper for even beautiful cookies) on a cookie sheets lined with parchment paper, 1 inch apart. Bake one tray at a time for 9 minutes. The cookies will firm up as they cool, so do not be tempted to bake them longer, or they will harden.
