I don’t have exact measurements but this is so delicious and moist.

Mayo
Garlic
Soy sauce
Black pepper

Oil
Paprika
Garlic powder
Onion powder
Salt

1/2 cup bbq say
1/2 cup duck sauce
2 T soy sauce
Frozen garlic cube

Mix mayo with any and all of your favorite seasonings and use to coat chicken.

You can also fry it in pan. No added oil necessary as the mayo has lots of fats.

It's best with thin pounded chicken breasts.

Love incorporating herbs in my marinades think parsley, basil, thyme, Rosemarie...
Gives it a pop of flavor.

My go to marinade is a generous squeeze of honey, some crushed garlic and a couple of splashes of soy sauce. You can add some mustard too.

I always thought grilled chicken was healthy. I see that it’s really not with the marinating in mayo...
Does anyone have a fat free method that still tastes good?

The Everything Bagel Chicken in Elizabeth Kurtz's Celebrate.
I can't share the recipe here, but I looked to see if anyone posted it in a review. While a lot of people referenced it, I haven't seen anyone post it. There are instagram and twitter posts from Naomi Nachman that mention it but I can't open the links to see if she posts the recipe.

I make a lower fat version of grilled chicken. I use a grill pan and cook the chicken on a low flame. I found when I tried to rush the cooking on a higher flame, it made the chicken tougher. I do the low and slow method of cooking the cutlets and they come out really juicy. It also depends on how thick your cutlets are, I use thin cutlets.

I spray pam directly on the chicken and sprinkle salt, black pepper and sometimes other herbs like oregano, basil, or parsley. I do this on one side of the chicken cutlets and then put that side face down on the grill pan, don't spray pam directly into the pan before the chicken goes in. Once the chicken is in the grill pan, season side down, I spray pam over the top of the chicken and sprinkle the same spices on the top. Let it cook about 10 minutes until the chicken turns mostly white and flip the cutlets. Cook on the other side for about 7 - 8 minutes. After you finish each round of culets, pour the remaining juices from the pan over the cutlets in whatever container you're storing them in so they're extra juicy.

Repeat.

Edited to add, make sure your flame is on and pan is hot before the first set of cutlets goes in it.

It's fantastic. I really liked that cookbook.

I should mention that I don't think anyone's going to sue Yael over this but one really has to be careful about sharing recipes from books in a public forum. (I think a one one one basis is ok, I'm trying to remember where I read this.) If they're already in the public arena, I.e. as part of a review, on a cooking site (e.g. kosher.com, etc.) that's find.
