Does anyone have a recipe for this delicious (Syrian) spinach pie?
I'm not Syrian so not sure if I have the name right.. TIA!

I have a kosher Syrian cookbook so I probably have it here somewhere but not sure about the name either! There is something called "spanekh b'jibn" which it describes like a spinach and cheese pie without the crust, could that be it?
1 chopped onion
1 tbs vegetable oil
2 ten oz packages frozen chopped spinach (or 2.5 lbs fresh)
6 eggs beaten
1.75 lbs munster cheese grated
1 tsp kosher salt
1/2 lb cottage cheese (optional)
1. Preheat oven to 350
2. Saute onion over medium heat for 4-6 min until translucent. Add spinach and saute 5 more minutes until spinach wilts.
3. In large mixing bowl, combine eggs, cheese, salt, and optional cottage cheese. Add spinach to egg-cheese mixture and mix well.
4. Pour into 2quart baking dish. Bake uncovered for 40 min until lightly browned.
Sorry if that's not it, but the picture looks really good either way!

I make it a bit different
1 onion finely diced and sautéed until translucent
1 pkg of frozen spinach defrosted and squeezed as dry as possible
Salt and pepper to taste
1 cup of Syrian curd cheese - salted, dried, and finely grated
-OR- grated Munster
1 egg
Mix onion, spinach, salt and pepper. Pack tightly into a well greased square pan
Mix cheese and egg and spread on top
Bake 350 until top is golden

The recipe is all about the cheese (2 pounds!).

Yes the recipes sound right. Spagnach Jiben is basically like a spinach quiche. Very important to squeeze out the excess juice in a colander before adding egg and cheese.
This dish is a staple dinner in many Syrian families. Classically served on Thursday nights with mejedrah (rice and lentils). Both can be eaten with a plain yogurt, sour cream, or Lebne.
This is one of my favorite dinners. A. You can make a few at a time and freeze. I make mine in a pie tart or the mini pie tarts. B. Great healthy dinner kids love.
You can also make Koosa Jiben which replaces Green Squash for the spinach.

It’s funny you say classically served Thursday night. The Syrian families that I know have meat/chicken on Thursday night since the moms are meated from preparing for Shabbat

My recipe is
Cut and saute an onion (as small as possible so Kids don't realize it's in there)
Throw in a frozen bag of spinach
Once defrosted and cooked, drain in a colander
Add salt, shredded cheese, about 2 eggs, cottage cheese optional- makes it fluffier.
I prebake either mini pie tarts or a large pie tart
And scoop the spanach into there.
They can be frozen or baked. I make alot at a time and freeze. Super easy to throw into the toaster.
Serve with sour cream/ plain yogurt
Im sure different families serve different dinners but I love this dinner on Thursday nights. Very simple and I don't need to use my oven. Only toaster.
