I don't understand. I also live OOT. We wash and check. People in Brooklyn or Lakewood don't wash and check anything? Only buy pre-checked?

The peach chicken salad in Secret Restaurant Recipes (I think the second one) is so good! I added it to my menu this year.
I always add in avocado, and on pesach I’m planning to use quinoa instead of dirty rice.

Avacado is part of the dressing? Sounds amazing!
Also, could you give more info on proportions? I guess I can't make dressing in advance if it has avacado.

Add in orange and yellow peppers. Carrot shreds if you don't want to use peppers. Drizzle with a good dressing and sprinkle with some chips.

1 medium ripe avocado, peeled and cubed
1/2 cup mayonnaise
1/3 cup oil
1/3 cup water
1.5 Tbsp lemon juice
2 garlic cloves, peeled
1/2 t salt (or much more to taste)
1/4 tsp pepper

Blend in processor.

Or top with some silvered cold cuts.

1/4 cup oil
1/4 cup pesach vinegar or lemon
1/4 sugar
1 teaspoon white horseradish (optional)
1 teaspoon of honey

Use romaine, red onion and pomegranate arils, maybe some clementine/mandarin segments.

1/2 cup oil
1/2 cup sugar
1/4 cup grape juice
1/4 cup white vinegar
2 cloves crushed garlic
2 Tbsp honey
1 tsp white horseradish (optional)
1/2 tsp salt

Ohhhh I didn’t realize you specifically wanted dressing recipes. Here’s the salad recipe. The dressing has peaches in it, so it’s still cool.

Marinade for chicken: Boil together 1 C apricot jam or peach jam, 1 C water, garlic powder, ginger powder (I leave out). Let cool. Add to ziplock bag with as many chicken cutlets as you want in your salad. Grill or bake it.

Salad:
3 peaches, sliced
6 C lettuce
1/2 C pecans (toast them if you want!)
1/2 C cooked quinoa
1/2 jicama (I leave out)
Grilled/ baked chicken

Dressing (blend together):
1 roasted peach (300 degrees, 20-30 min)
1/4 C olive oil
1/2 C peach juice (I use orange juice)
1/4 C apple cider vinegar (I use regular or red wine)
2 tsp lemon juice
2 Tbsp sugar

See dressing amounts above. It lasts 3 days in the fridge.
