Been doing keto for 1.5 years. I think soup is really difficult on keto. Best bet is to do a dairy cream of broccoli/cauliflower with heavy cream and cheese. Many vegetables that classically flavor soup are higher in carbs. A zucchini soup could work also. I sometimes do tomato but they are higher in carbs.

Made this the other night -

Sautéed 2 large onions
2 carrots peeled and chopped
2 zucchini (unpeeled) chopped
Celery sliced

Let veggies sauté a bit if you time.

Salt, pepper, onion powder, garlic powder

Water to cover. Cook 1 1/2 hours. Blend

I also got some others on this site. I’m not doing keto but I usually avoid making soup with starchy veggies.
Anon bec I post recipes

If you have chicken stock that adds flavor

I use broccoli, cauliflower, carrots, onion, mushroom, green and yellow squash and chicken (Orr chicken stock) to make carb free (or super low carb) soups

Mock potato

2 Tbsp oil
1 onion, diced
2 garlic cloves, crushed
2 large zucchini, peeled and sliced
1 lb. frozen cauliflower
1 Tbsp salt
dash of white or black pepper

Heat oil in a 4 quart pot. Saute onion and garlic until translucent. Add zucchini, cauliflower, salt and pepper. Add water to just cover the vegetables. Bring to a boil. Lower heat and simmer for 30 minutes.
Blend with a hand blender until smooth and creamy.

This cauliflower soup with shredded chicken is delicious.
I left out the entire beef fry part. But if you want it, you can try it without any brown sugar or use Swerve brown sugar substitute.

I made chicken balls that had some diced veggies in it (onion, red and green pepper, shredded carrot ) bound with almond flour , seasoned with parsley, salt, onion powder and garlic powder and pepper . Cook in a mix of water and chicken broth . After fully cooked , add it like matzah balls to chicken soup together With celery , zucchini and a drop of carrot from the soup. That’s a full meal in itself.

You can make soup out of low carb veggies
Low carb veg are those that have 5gor less of net carb per 100g
You can find a list on diet dr. Com
But make sure not to kick yourself out of ketosis
Just chop, sautée, season, add water and simmer.
You can blend or leave chunky

I like to make my own bone broth
I use chicken bones, beef knee bones, and when I can find chicken feet
I let it simmer a long time 24+ hrs
I make a big batch then freeze

I like having this with spiralized kohlrabi or celery slices,

Another good soup is cabbage, like from the cabbage soup diet - just leave out or substitute the non keto ingredients

Are you allowed to have lentils?
Lentil soup is amazing in winter, and so easy to make!
