I need ideas for simple but good suppers. and I dont have too many utensils- just 2 pots a peeler, knife and grater... TIA

mama bear at that point potatoes will be comin out of my ears... I will make squash latkes and veggie soup maybe even eggplant parmisan- but I have to make my own tomato sauce... so I was looking for more veggie based ideas

Yomtov leftover.
Chinese food.
You can eat a one pot cheicken with sweet potatoes and veggies.
Broiled fish and salads.

Maybe get a $10 Hibatchi ?

you can make eggs in a pot just like in a frying pan. I'd say make veggie omelettes. sautee the veggies first with some spices, then make the eggs and stuff them. not hard, pretty quick, and you can have them with or without potatoes as a side dish. if you eat gebrokts, you can make matza brie. you can also make matza lasagna on the stovetop .

I like zucchini fritters with applesauce. Grate zucchini, potatoes, carrots, mix it with egg and matza meal and fry em like potato pancakes. mmm.

make my potato chip chicken.
coat cutlets in egg, then crushed barbeque potato chips. its delicious.
u can bake it too.

well there is no other starch other than potatoes that you can eat on pesach. why would it be coming out of my ears? Zbecause of a couple of yom tov meals? it's not that bad.

My chol hamoed meals are:

Tues. night: turkey roast with cranberry sauce, sauteed broccoli and garlic and apple-celery salad

Wed. night (we are having a bd get together for dd, do I will have about 25 ppl for dinner): meatballs in tomato sauce, zucchini latkes, eggplant 'chips', green salad, italian-style tomato salad, onion kugel and other veggies and dips

Thurs. night: LO faux terryaki salmon, scallopped turnips and citrus salad

Then it's back to YT!

well one for sure will be fresh talapia, roasted veggetables. butternutsquash soup. prob mashed potatoes to keep some family memebers happy. Fresh fruit for dessert

Anotheris sweet and sour meatballs, with egg noodles. A big salald. zuccini something or other. Apple crisp.

im not sure what I am making the whole week. today I am making grilled salmon salad (grill salmon cubes in sweet and sour sauce till its almost black serve on salad with salad dressing)
tommorow I want to make mousaka (eggplant stuffed with mince meat mixture pour over chopped pealed tomatoes with spices in bake in oven covered.)
I know that I also want to make cottage pie and maybe potatoe kugel with steak in the middle-recipe from mishpacha last year.

we're still working on leftovers...but one new thing on the horizon is mashed potatoes with a burger, tomato, zucchini sauce on top.

for those of you who do not gebrocts - try using ground nuts instead of matzo meal ...

I'm with the omelets ... fry, flip, add sliced veggies such as tomatoes, scallions & cheese and spices ...
