What is easiest way to cook them?
I have never made them and had some in my freezer.
Took them out by mistake and don't know what to do with them that's super simple and everybody freindly

You can just spice and grill
Put on bbq sauce
Put on duck sauce
Make schnitzel
Anything that you do with regular cutlets you can do with dark cutlets. For anything other than schnitzel, I cover them and bake at 425° for 40 minutes. If I’m making schnitzel, I usually bake for about 25 minutes, uncovered.

I've never heard of a dark chicken cutlet. Does that mean boneless thighs - or what is sometimes labeled as pargiyot?

Toss with a little oil, salt, garlic powder, and black pepper. Grill or broil in oven, a couple of minutes per side.
If you want to get fancy, add a cube of basil to the marinade.

Figured so.
I just made some for Shabbos. I rub them with a bit of oil and seasoning (I like shawarma seasoning, but also sometimes I use chili powder or lemon-pepper seasoning or za'atar). Then just bake at 350.

How long? Covered or uncovered?

On a baking sheet. Uncovered. I don't use a timer. I just can tell by looking and touching them but best guess would be 12-15 minutes. They're typically cut very thin.

I just made thighs for supper last night.
Sauteed 2 onions with oil and soy sauce.
When browned and soft, added cubed chicken thighs and cooked for 10 minutes. It was delicious
