Chocolate Turtle Cheesecake
Standard graham cracker crust (can buy a chocolate version)
1 14 oz. bag caramels (1 container dulche la leche spread)
1 5 oz can evaporated milk (omit if using spread)
1 cup chopped pecans
2 8 oz. pkgs. cream cheese, softened (750 grams of gvinah levanah, 5% or higher)
2/3 cup sugar
2 eggs
1 6 oz. pkg semi-sweet chocolate pieces, melted
1/4 teaspoon almond or vanilla extract
In a 1 1/2 quart saucepan, melt caramels with milk over low heat, stirring frequently until smooth. Pour over crust. Top with pecans.
Soften the dulche la leche spread by placing the container in a bowl of hot water. Pour over crust. Top with pecans.
Combine cream cheese and sugar, mixing on medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate and extract.
Pour over crust.
Bake at 350 degrees Fahrenheit for about 45 minutes.
Chill and serve.

beautiful Yesha, but while it has 0 calories it doesn't really satisfy and might actually lead to weight gain!

Ohhh
YUMYUMYUMYUMYUMYUMYUMYUMYUM
I love cold, smooth, creamy, dark chocolatey decadent desserts!
I love Shavuos!!
My hubby and I usually have a cheesecake competition, but this year we're trying to go easier on the calories (and $) so we've decided to just make one.
But then I had the brilliant idea of making one for Shabbos and one for Shavuos! The Shabbos one will be made by my 8 year old daughter, the simple Israeli unbaked one with petit beurre cookies and 5% cheese and vanilla pudding. Shavuos will be a thicker, more decadent kind... Can't decide which recipe to go for... I'm leaning toward a choc. chip cheesecake but Yesha, I want to slide that slice in the picture over my tongue RIGHT NOW!
(forcing myself to be happy and satisfied with my glass of iced green tea...)
(and I am, B"H)

LOL, good point yesha.
Does your cake come out like a two-toned cake in layers?

Not really. The layer of caramel is generally too thin to be seen once the pie is cut.

I would like to make miniature cheesecakes with a layer of chocolate on the bottom (I can't remember if it was a cheesecakey layer or a brownie layer, but I think the former). I have seen them done by caterers but I've never seen a recipe.
As far as pareve goes, I understand you can directly substitute tofutti cream cheese & sour cream in any recipe.

Yeah, I think it's a layer of brownie, then cheesecake. Just bake in muffin tins.
