I have lots of farmer cheese to use up and am looking for some recipes for Shavuos. Ideally a cheesecake that's not too dense.
Can I substitute it for cream cheese?

Cheese latkes
Cheese blintzes
My cheesecake recipe is as follows:
1 whipped cream cheese (good quality- expensive brand)
1 lb farmer cheese
4 eggs
1 cup sugar
2 vanilla sugar
Crust:
Ostreicher chocolate chip cookies, crushed
Butter
I first toast the crushed cookies with the butter.
Bake 350 for 1 hour

I use this recipe cheese blints filling:
1 lb farmer cheese
2 egg yolks
2 tablespoon sugar
1 tablespoon vanilla sugar

1lb farmer cheese
2 tablespoon sour cream
1 cup flour
1 yolk
2 eggs
1/2 cup sugar
2 teaspoon vanilla sugar

Cheese cake:
1 lb farmer cheese
1 8oz whipped cream cheese
3 eggs
1 cup sugar
3 tables cornstarch dissolved in 1 cup milk
1 tablespoon vanilla sugar
Divide in 2 pie crust
Bake 350 for 1 hour
