This recipe is made in a disposable aluminum 9x13 pan.

2 large onions circle sliced
2 Cups sugar
Kosher salt to sprinkle on salmon
Lemon juice
6-7 appetizer size (or a little bigger) salmon fillet with skin.

Sprinkle kosher salt over all the salmon slices . I used to rinse the salt off before adding it to the pan. Can’t remember if it was part of the instructions I was given but I don’t bother anymore .


Slice onions and place them onion circles spread out in 9x13 pan.

Add two cups of sugar on top of oniins.
Place pan on top of flame on stove top . Small to medium flame . Allow the onions to release its juices and the sugar to liquify . Let the onions cook in this sweet caramalized liquid .
Lay the salmon slices into the onion and sugar “sauce” . You can do it salmon side down with skin facing up or lay the slices on their sides . Fill the pan with the salmon slices . Pour as much lemon juice as you need in order for the salmon to be just about covered . (It all depends how much liquid you have from the sugar and onions) . Cover tightly and keep cooking on the stover top on a medium flame for about 15-17 minutes.
Turn flame off. Let cool and then refrigerate. Keep in the same pan you cooked it in until serving time.

I use this recipe for the dough. I make it gluten free with bobs red mill 1-1 flour. I use coconut oil for the fat, and xylitol or maple sugar for the sweetener. I skip the crumbs. Peaches instead of apples.

For the strawberry shortcake trifles I layer macerated strawberries, stabilized whipped cream and some vanilla cookie crumbs in a mini Mason jar or those decorative lucite containers made for miniature trifles.

My DH told me about it Purim time that there was this new trend of salmon sushi cups online. So I googled it and found numerous recipes . All I did was check the oven temperature and cooking time and I basically did this:

Cut seaweed to fit muffin tins (these are the cups)
Cooked sushi rice according to instructions (make sure to add the rice vinegar and sugar mixture to the rice so that it’s seasoned properly)
Dice up salmon fillet (no skin) into small cubes.
Mix the salmon in a bowl with soy sauce and spicy mayo and a bit of sesame oil
Fill the seaweed cups with cooked sushi rice and press so that makes a thin rice layer .
Add cubes of spicy mayo salmon
Bake at 400 for 15 minutes
Let cups cool and top as you please . I added cucumber , black sesame seeds and spicy mayo.
Id like to also try it by adding avocado , crispy onions and sweet sauce , in addition to the other toppings.
I served it at my Purim Seuda and everyone loved them. It’s a great change to the way salmon gets served.

We do one dairy meal, that’s pretty much the same every year. Sea bass, other fish, lasagna, something else….also I don’t really make desserts.

I coat skinless salmon in mayo. Then in chopped pistachio, then bread crumbs.

I drizzl with a honey mustard dressing before serving, otherwise it can be bland.
