The favorite in my house is mini sweet & sour meatballs over mashed potatoes.
Other ideas:
Hot soup for day meals, other than chicken soup (which we have every meal at night) - vegetable, butternut squash, potato, etc.
Cold fruit soup - really nice if it's warm out for a day meal
Plated salad with cubed deli

(put cauliflower in the food processor and saute with vegetables)
seared steak salad
(romain, sliced purple cabbage, candied nuts, seared steak with a creamy herby dressing)
herbed salmon with guacamole
sauteed deli, cabbage, scallions, and sweet sauce over mashed potatoes

pulled chicken on baked eggroll
Sauteed liver over rice and puff pastry
liver pate
Tiny roasted chicken nuggets on rice
meditereanan meat and hummus with pita bread or small focacia
chicken and cabbage eggrolls
