My recipe uses only cottage cheese:

1 lb cottage cheese
3 eggs
2/3 c raw farina (or 3/4 c flour, for thinner pancakes)
1/4 c sugar (I often use 1 Tbsp vanilla sugar + 3 Tbsp regular white sugar)

Mix all ingredients together. If using farina, let the batter sit at least one hour (or even overnight, this works great as a make ahead recipe).

Fry cheese latkes. Don’t flip too early - let them look dry on the sides and even a bit dry on top before trying to flip.

This is for ½ container of cottage cheese.

1 Cup cottage cheese
1 Cup flour
½ Cup sugar
4 eggs
Shake of cinnamon

Mix all ingredients together. Fry in oil on each side till golden.
