Kugels, potato and noodle. Knishes. I've reheated rice and farfel successfully.
This isn't a freezer suggestion but for salads, dips and dressings can be made well in advance. Marinated salads can be made early too.

you can bake sweet potatoes and mash them and freeze. they go on sale a lot and when the oven is on anyway, you can bake them on a cookie sheet and you'll have a good side dish for whenver yhou want it

I used to freeze liver and stopped. It changes flavor and texture significantly even if packed up and wrapped right
