I freeze pasta with sauce before the final cooking (e.g. stuffed shells, lasagne, etc...before the cheese was ever melted) and results are great.
But once the sauce with the cheese incorporated is re-heated, I find it's not as cheesy....

It's fine to freeze.
If you want, you can melt more cheese on when reheating.

You can freeze it.
The problem is that it will be very dry when you reheat it because the pasta will have incorporated a lot of the sauce. Typically when you reheat a pasta dish you have additional sauce that you can use.
