I would like to visit places that are only amazing, we don't need to do trips so we only want to go if it's really great. Children ages 5 - 16.

Underground bullet factory was fascinating.
Rosh hanikra is gorgeous.
Ir David water tunnel was enjoyed by all, I don't know if I would rank it on SUPER WOW level like you're asking but it's definitely on my shortlist of tours worth taking.

National parks! There's soooo many good ones. A good museum is cool but seeing where our history happened and our land isn't something you can do in the USA.

Do you want reccomendations of some of our favorites?

ATVing , Horseback riding in Netanya, zip line in the Gush Etzion area called Eretz HaAyalim.
Stalactite caves.
Hevron tour with Simcha Hochbaum.
If you like hiking, there are lots of amazing water hikes.
Givat HaTachmoshet with Shacham Sela who is great with kids. She makes the whole thing come alive.
Jerusalem Time Elevator
Migdal Dovid Light show at night
There are really nice winery tours for the adults, we enjoyed the Gush Etzion Winery tour, We were able to do a family geared one in Golan Winery if the season is right where they guide you from picking grapes to making wine, stomping and all, with a picnic and fun history lesson,
The water tour to Caves of Yechezkiel
Near Haifa down the street from Eliyahu HaNavis cave - a worthwhile place to daven, and across from the beach which is gorgeous, is a museum geared for kids of all ages -National Maritime Museum and Clandestine Immigration and Naval Museum.
Latrun Tank museum.

The Kotel and Old City

Machaneh Yehuda

The Ramat Gan safari

Caesaria and Tzippori (both fun for seeing a mix of nature, Roman ruins, and Jewish history circa 100CE-700CE.

Stargazing in the Golan

Eilat dolphin beach

Tzfat candle factory and artist's colony

YMMV, of course - it depends how much your kids like history, if you have an awesome zoo wherever you usually live, etc.

Where is this bullet factory located?
Did you need a tour for the Ir David water tunnel, how did you understand what you were seeing if not?

Sounds beautiful! How would I know what I'm seeing, are there signs explaining and I would love recommendations please!

The shuk tour shows you many different vendors and you get to taste lots of different food. If you are adventurous you can do your own shuk food crawl but an organized tour is a lot of fun. I believe she also tells you about the history of the shuk.
I did the kotel tunnel tour so many years ago, sorry I don't have anyone to recommend , but ask Tzvi Satt.

Generations /Dorot tour by the Kosel. It's about half an hour. It's excellent. You can book online.
