I've heard 2 explanations but no sources for either.

1. It's a reference to the words החותך חיים לכל חי literally translated to "who cuts/slices life for all living things" but means who assigns a life portion/slice of life. So a new knife is like one of the simanim.

2. It's a segula for good shalom bayis, because new knives are sharper, so they cause less frustration when using. I'm not sure whether the person who told me this was being facetious or not.
