I just used frozen roasted veggies today for supper but I mixed it into rice . The veggies are very mushy but if you like it that way then it’s fine .
The veggies I had were colored peppers and green and yellow squash

I would only freeze roasted vegetables if I was planning on using them in soup. Otherwise they would defrost all soggy and mushy.
