Anyone tried the Rorie Weisberg Cabbage Kugel recipe?

Has anyone tried this recipe for Cabbage Kugel, or does anyone have a tried and true Cabbage Kugel (pareve) or Cabbage Quiche (pareve) recipe?

Cabbage Kugel

Ingredients
-
1 tablespoon Gefen Olive Oil

-
1 large onion, sliced into thin half-moons

-
1 16-ounce (450-gram) bag shredded white cabbage

-
3 medium green or yellow zucchini, peeled, grated, and squeezed

-
1–1 and 1/2 teaspoons Tuscanini Sea Salt

-
1/4 teaspoon pepper

-
1 tablespoon Manischewitz Honey (optional but delicious)

-
4 eggs

-
1/4 cup arrowroot starch (can be substituted with potato or tapioca starch)

Directions
Prepare the Cabbage Kugel
1.
Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
2.
Heat a large frying pan or wok. Add oil and onions and sauté until golden. Add cabbage and cover pan. Cook until soft, stirring occasionally.
3.
Add grated zucchini to pan and continue to sauté, uncovered, until most of the liquid is absorbed. Add salt, pepper, and honey and mix to combine. Let mixture cool slightly.
4.
In a separate bowl, whisk eggs and arrowroot starch. Add the veggie mixture to the wet mixture and mix to combine. Pour batter into an oiled eight-inch (20-cm) round or square casserole dish (preferably not disposable; if using disposable line with Gefen Parchment Paper).
5.
Bake for 45–50 minutes or until golden.

Thanks. Thats great to hear. Because Im seeing lots of cabbage kugel/quiche recipes where you have to separate the eggs. This one not.

I wonder if it would flop if I double the cabbage and onions, and omit the zucchini.

I skipped the zucchini and subbed corn starch for arrowroot. It was yummy!

2 (14) oz bag cabbage
5 onions
1/2 cup oil
8 eggs
2 c flour
1 c watwr
2 tbsp soup mix
2 tsp salt
Pepper
Saute onion in oil till browned. Add cabbage until golden. 8-10mins.
Add rest of ingr.
Sprinkle sesame seeds ontop.
Bake 45 -60mins. Until crusty top.

I made this one, it was amazing!!

Think it was from mishpacha. Not sure.

One of my favourites.

I think she developed the recipe for Pesach. I use half almond flour and half potato starch.

She generally avoids using regular flour, but you could experiment. The texture might be a bit different.

Any others have opinions on leaving out the zucchini and not replacing with more cabbage?

Honestly I don't remember if I increased the cabbage, but it sounds like a reasonable idea. I think you can play around with quantities to suit your needs.

It looks good, but with using all the mentioned amounts of cabbage and zucchini, all I got was 2 small loaf tins, not even filled to the top.

I halved the recipe and made 1 loaf tin and 2 muffins.

All that cabbage and zucchini is supposed to fit into one little 8" round pan.

Why would it flop? I always play around with recipes, Usually with amazing results. I like this recipe because the cabbage reminds me of noodles. I add more pepper for taste. I like to brown the top by putting it on top shelf in the oven first then the bottom.
