My dh is taking my kids to golf in a huge shopping centre. If I go with, with my toddler them I'll end up going shopping, and it'll be literally no point if I can't buy anything. But it's really halacha not to buy things we don't need for Yt no? On the other hand if I don't go along I'll be left home just with my toddler. I can't get much done anyway with him around.
Debating if I should go, or just stay home.

Can you just walk around the mall, push baby in stroller, get your steps in? (Do you buy something every time you go to a store?) if not then maybe he can drop you and toddler off at a playground or play space on the way

I didn't join them, they've just left.
My baby/toddler is happy because he's watching on the computer. I'll get stuff done, then take him out locally for a bit. I need some more paperware etc for second days anyway. That'll be his outing.

No I do have some control but I'm talking a huge mall, with every store that I want there. I don't usually have time on a normal day, that's the annoying thing. It'll be too tempting, and no point to just go see what's there so I'm staying home, getting some cooking done instead.
Tomorrow we have a full day outing so I'm basically losing that day to cook. Then it's already hoshana rabo/erev Yt, so its all for the best.

Hilchos chol hamoed. There are very specific halachos about what can/can't be done on chol hamoed.

I would go and whatever I buy, I'd make sure to use/wear it for yom tov.
