Just use any cake recipe. Most normal size cupcakes take about 25 min, check at 20.

Easy recipe (from MIL, don't know where she got it from)

1 cup water
1 cup oil
2 cups sugar
3 cups flour (if not self-raising, add also 3 tsp. salt & 3 tsp. baking powder)
4 eggs
1 tsp. vanilla

Bake at 350 for 20 minutes (for cupcakes; 45 for cake).

how would you combine this?

do you mix in this order?
the flour doesnt get lumpy? the eggs dont need beating?

3 teaspoons salt?? Isn't that a lot? sounds like a typo

this seems to be the same just with instructions. just found it.

it calls for self raising flour.

wouldnt I just add another tsp baking powder instead of salt?

That's plenty of sugar.

This is a no fail cake recipe that works great for cupcakes. You can use any form of juice or milk, can leave out the vanilla or sub with liquor, can use a bit more sugar or flour if you like denser or sweeter. If you use non dairy unflavored unsweetened pareve milk, add a bit more sugar.

2 1/3 cu flour
1 1/2 c sugar
3 eggs
Dash of salt
1/4 tsp baking soda
2 tsp baking powder
1/2 cup oil
1 cup juice
1 tsp vanilla

Combine all ingredients. Any order.
Mix it together with an electric beater or a whisk or a fork until smooth.
Bake on 350 until something poked inside comes dry.

how many cupcakes does this make?

can I use water?

how does mixing all ing work when flour should hardly be mixed cos mixing too much develops the gluten which makes it "flop"?

I don't usually make all of it into cupcakes, usually pour the rest into a small pan. My guess would be 2 dozen. For standard cupcake size about 2/3 full.

I would imagine you can use water but probably would need more flavoring and sugar. Don't recommend trying it may flop.

It's extremely unlikely that you can over mix by hand. The main reason that cakes flop is because baking powder or baking soda is too old or cake is removed from the oven when it's not fully baked.
