Pyrex or something better

I want to start baking kugel and chicken in real bakeware.

I am reading alot about how they can shatter etc.

I dont want to have pressure using it and telling kids to be careful all the time...

also - the choice!

how do you decide which one?

anything else as good as pyrex? non toxic etc etc but more practical?

I bake and cook everything in pyrex unless I’m freezing it
Why not just use Pyrex?

why wont you freeze pyrex?

I would want to prepare kugel for the freezer too without having to use foil...

Because I use them! I freeze them every once in a while, but I need to wash it and put away

I remember seeing a video that differentiated between PYREX (in all caps) and pyrex (Lower case). I believe they said one was shatter proof and the other was more sensitive to temperature.

Exactly its two different types. The lowercase is cheaper one that shatters from China. All caps is the original quality stuff European style.

oh yes, thanks for reminding me.

so thats why some say it shatters. is there a way to make sure what you are getting?

there are some pyrex that come with plastic lids. my guess is that its just for storage?
cant really put it on hot plate with plastic lid?

I will still need to use foil to cover the pan.

does anyone have glass lids for their pans?
not all come with it. looks abit heavy and bulky.

why does it make sense to bake chicken and kugel in these glass pans but
I wouldnt bake it in stainless steel pans for baking cake?

Chicken in a metal pan isn't a problem at all nor is kugel.
Stainless steel doesn't conduct ovenheat very well. Glass or any porcelain or stoneware is much better.

I know its not a problem but I have never seen a baking tray for cake being used for chicken.

isnt stainless steel is meant to be good for baking cake?

isnt usa pan stainless steel or is it aluminium?

I don't know what usa pan is.
The very best heat conductor for cakes is real aluminium pans.

Ikea have great stainless steel baking pans in all different sizes.
I have no problem cooking chicken or vegetables in them. Why would I?

They aren’t the most beautiful pans to be putting on your dinner table, but for weeknights they’re fine.

if I get the real pyrex do I still have to be careful with all the thermal shock, shattering etc?

what about adonized aluminium or enamel like granite ware?

are these safe materials? do they need to be lined?
are they very heavy?

I'm using Pyrex for a few years already, never shattered. You're not supposed to use it higher than 500°f.

Use parch paper for easier job cleaning.

pyrex are quite cheap compared to enamel ceramic and aluminium.

I've never done that. How many pans are you planning to invest in?
I only have a few. When I want to freeze I remove from pan and transfer to a disposable one or just in a bag/on plate if it's small enough. I use paper so it's easy to remove and it doesn't touch the aluminum pan.
Reheating a dry food in a lined aluminum pan I don't think is a problem. (Even baking - like challah)


As for covering - yeah that's a problem. I bake uncovered when possible and cover with parchment paper before covering with foil when I do (rarely). Be careful that the water vapor doesn't pour off the paper into the food because then it's defeating the purpose...

Pyrex is very heavy.

which ones - enamel, hard anodised, stoneware, ceramic - should I go for?
