I left my soup on what I thought was low overnight, but apparently it was too high and now most of the soup cooked out and of course I am having company tonight. I added in water and have it cooking on low, but what else can I do to save it??

Add water and let it continue cooking. No harm done. You basically made a concentrate and now you added water, so you’re all good.
