1 ready made chocolate cookie crust
7 oz marshmallow cream
1/4 cup non dairy creamer
a couple drops green food coloring
1/4 tsp peppermint extract ( a little less, if you dont like strong mint taste)
1 cup richs whip, whipped up
In a small pot, melt marshmallow cream, non dairy creamer, food coloring, and mint extract. Mix until smooth. Put in a bowl and chill in fridge about 20 min, until slightly thickened.
Fold in whip cream. pour into crust. I like to top with choc mints or choc shavings.
If you put in too much mint flavor, it will taste like Toothpaste Pie, so be careful.
Freeze for 4-6 hours or until firm.

Cookie, im sure any recipe coming from you is yummy...but I don't think I could eat soemthing called this!
