My daughter has been asking for warm cookies for the bus, first thing in the morning.

I like to prepare pre rolled frozen cookie dough and bake it fresh in the morning. Does anyone have a recipe of a healthier cookie with some nutrition. No peanut butter please, her school is a nut free zone

I don't have a recipe but meanwhile I'd assume any recipe you make would be healthier than frozen cookie dough...

I make delicious, nutrient dense breakfast cookies with bananas, almond flour, seeds and chocolate chips. They are like muffin tops. They can't be rolled and frozen but I bet they can be scooped out the night before, refrigerated or frozen and baked in the morning. Let me know if you want the recipe.

2 bananas
2 eggs
1/3 cup melted coconut oil
1 tsp vanilla extract
2T maple syrup
1 cup almond flour
3T coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
Handful of chia seeds, sunflower seeds, pumpkin seeds, chocolate chips, raisins, chopped walnuts

Mash bananas, add eggs and other wet ingredients, mix. Add flours and bs and bp, mix well. Add nuts, seeds etc, mix to combine.

Drop by 1/4 cup on lined cookie sheet, bake at 350 for about 20 min.

It's a forgiving recipe, you can play around with the flours, add ins, sweetners etc. I've also made this with mashed sweet potato instead of mashed banana.

My kids also want cookies for the bus but it doesn't need to be warm, thankfully. I make the healthy oatmeal cookies from 2nd balebustes choice and they freeze beautifully and they're decently healthy for a cookie

Here’s mine:

1/2 c coconut sugar
1/4 c agave (or honey)
1 c avocado or grape seed oil
2 eggs
1 t pure vanilla exact (I like TJs)
3 c oats
1 1/2 c light spelt flour
1 t baking soda
1/2 t salt
1 cup choc chips

I roll into big balls so we get giant cookies.

Bake 350 for 10/12 minutes.

Mash banana, add in oats and chocolate chips.

That’s it. I can make them in the toaster in 10 minutes. I feel good giving it to them and they love the chochlate chips!
