How to use up green peppers

Any recipes I can make that use more than one at a time? I have five that are starting to go. Thank you!!

Cut off the stems so you have nice lids for your pepper cups. Clean out the inside and rinse.

Mix up ground beef, cooked rice, 1 egg, tomato sauce and season well. Stuff each pepper with the mixture. Spoon on more seasoned tomato sauce. Lay stem/lids in same baking

Bake uncovered for about 1 hour.

Dice freeze in seperate portions and when you need some for sautéing it’s ready

Sure. Frozen peppers are seen in freezer isles everywhere.

Companies though have quick freezing methods. I've never myself frozen much raw veg so it might b ok, but freezing at home might have different outcome than store bought frozen

If needed I'd personally freeze in batches after having stir-fried

Recipe for stuffed peppers please?

I slice, freeze on a cookie sheet and then transfer to a bag . Use for soup, stir fry etc

Bake chicken bottoms with strips of green and red pepper, and canned mushrooms. Some onion, garlic, some water spices. Cover. Bake till soft.

Saute chicken cubes with onion garlic, red pepper, green pepper, Celery, mushrooms and baby corn. Could add in rice after sautéing, add some water add in the rice and keep stirring, till water cooked down.

Letcho

Saute onions, garlic, diced red and green pepper, (Celery)and mushrooms add into cooked brown rice or cooked Quinoa.

I use green peppers for lo mein and for a vegetable orzo my kids love. Let me know if you want me to post the recipes

Whenever I have ’going’ peppers, I saute onions, then add the thinly sliced peppers and sauté some more. I season with salt, pepper and any other spices I like.

I divide the mixture (depending on how much I made) and freeze them separately.

Then, whenever I make mashed potato, I’ll defrost one of the portions and mix together.
Tastes delicious.

Add green pepper to a ratatouille dish - nobody will notice 1 or 2 green ones lurking in there.

Add to chicken soup, and drain off with bones (and or anything else you drain off). Gives an amazing flavor.

Add to sauteed liver. Cut in thin strips and saute along with the onions.

Pepper steak - yum!
