Would like to leave my oven on over shabbos , however it shuts off after 12 hours . Any way to over ride this ?

Google your model number and see if the manual is available online. Many ovens have an option to override that but some don’t.

Brand and model number?

If you have the owner's manual, if there is a Sabbath mode, the manual will tell you how to set it.
