I know I know, not healthy, but other than French toast- anything else?

My snap benefits were stolen the first day of the month, and trying to be extra creative so we can get through the month with least grocery expense…

My mother used to make delicious challah kugel. I don't know exactly recipe but cut up challah big cubes mix with lots of eggs sugar and Cinnamon and sprinkle with Cinnamon mixed with sugar and bake in the oven. Yum!

Challah kugel soak challah in water, squeeze out water, then grate in apples. Oil, eggs, sugar, vanilla sugar, vanilla pudding powder, you can add in Strawberry jam. If you want recipe I can share

Challah kugel

1 challah, remove crusts, tear into chunks.

Pour some water over the challah and squeeze into a dough.

Add 3 eggs

Vanilla

About 3/4 c sugar

1 thinly sliced apple

1 T. Oil

Mix together. Put in baking pan. Sprinkle with Cinnamon.

You can make stuffing in a Cassarole dish and add any bits of leftover veggies, shredded chicken to make a complete-ish meal.

Savory onion Challah Kugel

1 challah, remove crust, tear in chunks
1 large onion
2 eggs
1 t Salt
1/2 - 1 t Dried parsley
Black pepper.

Sprinkle challah with water and squeeze into a dough.

Dice onion and Sautee in generous,amount oil.

Add onions and oil.

Add salt, parsley and pepper.

Bake.

This makes a great stuffing, stick under skin of chicken. The chicken schmaltz makes this Yum!

Pizza beans on toast. Heat a can of drained rinsed beans in some tomato sauce, you can saute an onion first if you want more flavor, add oregano and some cheese if you have it and serve over toast. Super filling and yummy.

My mother used to make something she called souffle, but it wasn't the finicky French dish. It's more of a dairy challah kugel, so it can be a whole meal.

Here's the recipe:

9 slices white bread, crust removed, pulled apart into small pieces
4 eggs
2 1/2 cups milk
1 tsp salt
Sprinkle white pepper
1 tsp dry mustard powder
2 Tblsp dried minced onion
2 packages shredded cheese (1 lb total)

Mix all the ingredients together and let sit overnight. Let it come to room temperature and bake uncovered at 350°F for around 1 hour until it's no longer jiggly. Let it rest for a few minutes before serving.

When we were old enough not to be grossed out by vegetables, she used to add a sauteed veggie layer. If I remember correctly, she'd make the souffle mixture in a bowl and refrigerate that overnight or at least for most of the day. Then she would saute whatever veggies she had on hand. She would put half the souffle mixture into a greased pan, smooth it out, put the veggie mixture on top, smooth that out, and then add the second half of the souffle mixture on top, smooth that out and then bake the whole thing.

Another idea is to make gratinate, which is essentially fancy grilled cheese, but spread out in a pan so you make it all at once and not individual pieces.

Here's a recipe for it with mushrooms, but you can also make it with sauteed onions or any other veggies you have available:

Don't worry about the specific ingredients. Treat the recipe as more of a guideline. DH and I used to make this as a relatively quick and easy dinner back in the days when it was just the two of us. We should really make it again and see if the kids will eat it.
