Anyone know how to make the sweet potato they put in poke bowls?
The one I usually see looks like it has a coating, but open to any recipe.

Dice them/cube them , drizzle olive oil , salt and spread on a cookie sheet . Bake at 400 uncovered until done . Usually 30-40 min.

If you want them to taste a little more Asian you can drizzle some sesame oil and a little soy sauce before you roast.

just drizzle oil. I like a lot of sweet sauce and spicy mayo so I usually dont bother with spices.
I also usually cover them first to make sure they cook all the way through but I like it when they are very soft inside and I dont want to burn the outside or undercook the inside

I'm pretty sure it's the same tempura sweet potato they have in sushi rolls.
