Does anyone prep deli roll Thursday night, and bake it in the oven Friday (to be eaten Shabbos lunch). Is that okay? TIA

You can freeze raw. Can’t imagine why you can’t refrigerate overnight, but it might get a bit soggy.

I do it every week.
I prep Thurs afternoon, bake Fri.

It’ll likely turn out puffier if you bake it cold from the fridge because the layers of fat and gluten stay separate, unlike when it’s warm, and also because it’s not frozen, where the shape will set before all the steam expands it. Sounds perfect!

Yes, almost never do it any other way. I prep Thurs night and bake Friday.

What are you gaining by baking it Friday as opposed to Thursday if it’s going in the fridge until Shabbos day anyway?
Why not bake it Thursday night and refrigerate for two days instead of one?

Lol. Honestly, because this is normally happening at 11pm and I'm not waiting up for the deli roll to bake and cool down enough to refrigerate
But yeah, you could totally do that
