For baking kugels and cakes, mayonnaise, and salads. Not for frying as we don’t fry anything here

For kugel and salads, extra virgin olive oil.

That doesn't work for mayonnaise (for some reason it becomes very bitter) and it won't work in most cakes.

Maybe coconut oil for cakes?

Thanks!
Is walnut oil good? Or same as cottonseed?

All around I rely on light olive oil for Pesach for cooking & baking including desserts, very neutral, & healthy option (evoo for salads)

Walnut oil is fine for mayonnaise, no better taste.

FYI. If you have a costco giftcard, you can shop at costco without membership. Any member can get you a gift card- find someone, put on enough $ for the items you wish to buy for pesach (avocado oil, walnuts, chicken, grape juice, fresh veggies and fruit, matzah, even pesach cakes, mixed nuts and candy) and walk into costco with the card. You just have to pay WITH the card only.

You can also supplement the gift card payment with cash as I did recently. I had about $50 left on the gift card and my bill was about $80, so I paid the rest with cash. No problem at all.

You can also use a debit card for this. Just not credit.

Light olive oil is not the healthiest option. It’s highly processed and has less nutrients and more chemicals in it than extra virgin olive oil. I would consider it the same as canola oil.
