The eggs at Aldi are significantly cheaper but only have large

I think for around every 4 extra large eggs, you need around 5 large eggs. Some recipes do fine with a different amount of egg though.

Here in Israel I can only get M or L eggs. My recipes (I use American recipes) turn out perfectly fine.

Yes, you can.
What I do is add one egg if the recipe calls for 6+ eggs.

Shouldn't be a big deal unless you start to triple and quadruple since ratios get skewed.
Are you baking the same things as last year or trying out new things?
You may check the info of eggs weights of your country, should give you an accurate answer

Yes. At some point extr lg ends were 4.75 a dz and large street 1.99...
I bought lg and an extra egg for every 5-6 eggs in the recipe. Came out exactly the same.

Standard recipes use large eggs if size isn't mentioned.

I've not sure if I've seen recipes that calls for extra large eggs.

The official 'rule' for this is to add 1 extra egg for every 4 eggs. I do it every Pesach cuz I buy the L eggs on the grey sheet carton then. Works perfectly bh.

I've never heard that Jewish recipes are different with regards to egg size. I use large eggs always.
