My challah is raw in the center

I moved a little big ago and never had a problem with my old oven. My new oven is also a GE but this one is a wall oven (would that make a difference??) I’m making the same challah recipe for over 10 years but for the first time they are coming out raw in the center …

My rolls which I made on a sheet pan are all the way cooked thru but obviously a lot smaller. I made 10 lbs which was about 12 challahs I baked 2 and froze 10 raw so that I can experiment and not have bad challah week after week… aside from trying a sheet pan anything else I can try? Any other ideas why this is happening?? TIA

It’s on the lower rack 2nd from the bottom. The top is very crisp, a few more minutes would be burnt..

Bake at lower temperature, like 320, for longer time.

This keeps top from burning while inside bakes.

Get oven thermometer to check if the setting is accurate.

Maybe your 350 is really 390.

My new oven doesn't bake challah properly either.
The new ovens don't work evenly on yeast doughs.
After I bake the challah I remove them from their pans, turn on their sides and bake on lower temp to finish it.

I am not sure if this is what it is but once I bought a different company honey and I used it in my challah and the challah never baked no matter how long it was in the oven for

that probably means your oven is too hot.
If you can't change oven temperature, bake smaller challot.

Do you have convection? If so, try baking that way.

I had that. I made 2 changes that helped.

1- I turn the oven on to 400 for the first 15 minutes. Then lower to 375.

2- instead of baking in individual pans, I bake on baking sheets.

This has solved the problem.

I never had this issue before until I got a new oven. I double checked the oven temperature with an oven thermometer and it seems to be accurate so I have no idea why I started having this problem.
Been baking challah for 20 years…
