Peanut butter
Almond flour(you can add it to pancakes and muffins)
Eggs with cheese added.

Just adding in case some people are not aware, if it's a sensory based pickiness, food therapy can be really helpful!!!

It seems like your child has an appetite issue vs a sensory one but just putting it out there in case it's relevant.

To increase appetite and decrease pickiness: thiamax, zinc picolinate, a humic fulvic supplement, probiotics.

Also worth checking with a myofunctional therapist that there are no myofunctional issues going on -- tongue or lip ties, high palate, narrow jaws, restricted tongue movement, airway restrictions, low oral muscle tone.

How old is the kid?
If not too young try to involve kid in food preparations, even for something very simple.
Make sit down meals with family.

When my son was diagnosed with failure to thrive they had us add calories to everything.

Oil in everything (including yogurt). Fry. Whip cream with fruit. High calorie ice cream.

He's now 19 and bh not having health concerns. He's short and wiry and barely 100lbs. He's still picky, but nowhere as bad and eats a ton of the foods he likes.
