Esrog jam - ofr every cup of chopped esrog add 1/2-3/4c. sugar and 2 Tblsp water. let simmmer until it sticks to (coats) a wooden spoon - about 1/2 way through cooking time (ie when it's still runnny) - taste for sweetness and adjust if needed. Jar it and it can keep up to a year-18mo!
Well I don't have a recipe, but we made it into an art project. We stuck cloves into the esrog with the kids and made a really yummy smelling besamim for havdalah
