I know I've seen it in one of my cookbooks, but can't seem to find it again.
Anyone have a recipe?

The original KBD also has a recipe for candied carrots. Do you have that cookbook?

Here's the recipe from KBD:

Roasted Caramelized Carrots

3 pounds carrots, peeled and sliced into 1/4 inch discs
1/2 cup sugar
3-4 T. oil

Preheat oven to 400 degrees. In a large bowl, combine the carrots, sugar, and oil. Toss to coat. Spread the carrots into disposable tins in a single layer.

Roast about 45 minutes to 1 hour on the middle and top racks of the oven until carrots are caramelized and begin to shrivel. Shake occasionally to prevent the carrots from burning.

Yields 8-10 servings.

I've done it with frozen sliced carrots and it worked. It could be I had to cook it longer I don't remember.

I made different sweet carrot recipe tonight on the stove with frozen carrots and it worked fine.

try some brown sugar & maple syrup ...and bake for a long long time ...

They were good, but I'm not sure I'd make them again. They didn't seem to go down too well. Neither did the spinach souffle from the S&S. G-d help me. I'm running out of ideas for side dishes!

have you tried candied sweet potatoes instead of the carrots ... we like it vs the carrots ...

and sometimes basics go better then patchkied stuff ...
