Help me use up cooked oatmeal

I have a pot of plain cooked oatmeal...

I want to make muffins or a quick bread with it, but all the recipes I'm finding call for dry uncooked oats...


ideas?????

Stuffed Oatmeal Cookies

3 cup flour

1 cup sugar

1/2 cup shortening

1/2 cup milk (sour)

1/2 cup molasses

1/2 cup raisins

1/2 cup oatmeal, cooked

1 egg

1 tsp. baking powder

1/2 tsp. soda

Allspice

Mix milk and molasses and oatmeal. Mix (cream) sugar and shortening and egg. Combine all dry ingredients. Sift all dry ingredients. Put these together; mix well. Make small drop cookies. Bake in medium oven until brown.
Oatmeal Muffins
1 cup cooked oatmeal

1 cup buttermilk

1 large egg

1/2 cup packed brown sugar

1 cup flour

1/2 tsp. salt

1 tsp. baking powder

1/2 tsp. soda

1/3 cup melted margarine

Soak oatmeal in buttermilk for one hour: Sift flour, salt, baking powder and

soda Beat together egg and brown sugar. Stir the oatmeal and egg mixture

together. Stir in the flour mixture. Add margarine. Spoon into muffin tins

(greased) or muffin liners. Fill 2/3 full, bake at 400 degrees for 20 minutes.

Makes 12 muffins.

Apple Oatmeal Betty

Heirloom Recipe AwardFrom The Household Magazine, November 1934, p. 41.

1/2 Cup Cooked Oatmeal
2 Cups Thinly Sliced Apples
2 Tablespoons Butter
Sugar, Cinnamon, and Salt

Fill well-oiled baking dish with alternate layers of oatmeal and apples. Sprinkle each layer generously with sugar and cinnamon. Dot with butter. Add few grains salt. Bake in moderate oven (375 F.) for about one hour.

Tamiri....that muffin recipe made the most amazing, moist muffins ever!!! (And I make muffins all the time!)

I used ww flour, turbinado sugar, and ricemilk, and virgin coconut oil instead of the margarine.
the best part...Turning soggy old oatmeal that nobody wanted to eat into a delicious treat.

Tamari, I want to try your muffins, but what is butttermilk? Can I use regular milk or pareve milk?

for buttermilk substitute, put 1 tablespoon vinegar in a cup, fill w/ regular milk or soy milk (soy milk will look like its curdling, but its fine).
