cook carrots and broccoli. After cooked, slice them up and add oil, salt and vinegar.

I have one that involves yogurt, apples, and I think raisins...let me know if that will do and I'll post it.

2 apples, chopped bite size
3 cups broccoli, cut up (I like to steam it and then run some cold water over it but the origional recipe calls for raw)
1/4 cup walnuts
1 small red onion chopped
1/3 cup raisins
1/2 cup vanilla yogurt

Mix and serve
Is even better if you make in advance.

There is a delicious one in Kosher By Design Entertains, made with red onion, raisins (I use craisins), sunflower seeds, cashews, and ramen noodles.

Here it is:

Broccoli Cashew Salad
1 head broccoli, stems discarded, florets chopped small
1 cup mayonnaise
1/2 cup sugar
3 Tblsp red wine vinegar
1/2 small red onion, chopped
1/2 cup raisins (I use craisins)
1 package ramen noodles, uncooked, discard the seasoning packet
1 cup raw sunflower seeds, not roasted or salted
1 cup raw cashews, not roasted or salted

Place broccoli in large bowl. Mix mayo, sugar, vinegar and red onion together, and pour over broccoli. Add craisins, crumbled ramen noodles, sunflower seeds, and cashews.

(I never measure the craisins, sunflower seeds or cashews, just sprinkle in what looks right.)

I cook broccoli al dente (before they go mushy), chop them into small bits,
mix with halved cherry tomatoes and chopped red peppers.
Then make dressing from 1tbsp soy sauce, 1 tbsp OJ, 1/2 tbsp sesame oil.
Delish topped with sunflower seeds.
You can also add pasta or egg noggles if you are serving a large crowd.

If you're using frozen broccoli (which gets mushier once cooked), I mix with boiled
cubed potatoes, chopped red onions (optional), chopped red peppers with vinaigrette
made with vineger (or balsamic vinegar or lemon juice), olive oil, a bit of grainy
mustard, salt & pepper. YOu can add chopped parsley, corriander, chives etc.

you can just use regular recipe and substitute oil for mayo will be just fine

I had the KbD version at someone's house last Shabbat and it was DRENCHED in mayo. I am not a mayo fan. I looked up the recipe here and made it myself this Shabbat, but I put in just enough mayo to coat the broccoli - in fact, even less. Just enough to give it some flavor. I used the mayo more as a base for the vinegar and sugar (I used Splenda) than to actually make a mayo-based dressing. It had flavor without tasting or feeling mayonnaise-y.

Also, as per someone's reccommenation on here, I blanched the broc first - just dunked it in boiling water for a minute. It turned a bright, beautiful green without actually getting cooked.
