Just wanted to let you all know that I've managed to cut the sugar down to 1/4 cup and the vital wheat gluten down to 3 tablespoons without sacrificing taste and elasticity.

Here's a 100% whole wheat challah recipe that can be made without a bread machine:

2 1/4 cup/s Lukewarm Water
2 1/4 teaspoon/s Active Dry Yeast
1 tablespoon/s Brown Sugar
1 tablespoon/s Salt
2 tablespoon/s Oil
5 tablespoon/s Honey
6 cup/s Whole Wheat Flour

Preparation
1. Measure 1/4 cup of lukewarm water and put it in a bowl.
2. Sprinkle 1 package of active dry yeast (2 1/4 tsp.) and 1Tbsp. brown sugar over the water.

3. In another bowl, combine:
2 cups warm water
1 Tbsp. salt
2 Tbsp. oil
5 Tbsp. honey

4. Combine the yeast mixture and the water mixture.
5. Beat in 6 cups of whole-grain flour.
6. Knead briefly, add flour if necessary.
7. Allow the dough to rise in the bowl.
8. Shape Challas and allow dough to rise a second time.
9. Bake at 350 for about 45 minutes for 2 loaves. If you make more than two loaves, check if they’re ready after 30 minutes of baking. To determine if they’re ready, knock on the bread and see if it sounds hollow; if it does not, leave it in the oven for a few more minutes. It should be a nice brown when it comes out of the oven.

Helpful Hints
This recipe freezes beautifully. To get the “fresh out of the oven” taste, remove from freezer, moisten the top of the challah with a little bit of water, and put it into an oven at 350 degrees for about 20 minutes.

You can double or triple the recipe. Remember: you can’t take challah with a bracha for a dough that uses less than 20 cups of flour. For a dough that uses at least 9 but less than 20 cups of flour, you can separate challah without a bracha. (Source for the taking of challah: the Halachik Authority that I go by.)

I meant the original recipe, so 4.5 cups would be too little to make 2 challas.
