everyone liked the apple kugel I made
and I have a really good apple matzoh kugel (more like an apple crisp or cobbler) that I used to make

I made a sweet potato pie with some mashed pears and nuts. We liked it but it's a lot of work .... I think I'll stick to salads next year.

BROCOLLI made with potato pancake mix. I double it and freeze them, cuz they are wanted all through pesach.

brocolli kugel

1 6oz pkg of potato pancake mix
2 cups of cold water
1 16oz bag of bodek brocolli cooked, and mushed with poato masher
4 eggs
1 stick of pareve marg melted
add water to pancake mix and let sit 10 minutes
add eggs and marg to pancake mix, add brocolli
spice as you wish...I putin tbsp of onion soup mix, garlic powder pepper and salt...make it your own!
bake in a 9 by 9 inch pan for 1 hour at 350 f
enjoy and let me know how you liked it!!

I found this butternut squash kugel recipe that looks delish. I'm going to make it, maybe revise it just a little. I can post the recipe at some point if anyone is interested-or let you know how it comes out after I try it

I make an apple kugel that is always a big hit. I always get asked for the recipe when guests eat it. I also make a pineapple kugel - I know sounds gross but I tried it once and I've been making it ever since, I love it since it's really easy to make and it can be eaten hot or cold. I also make the basics, potato, broccoli, tri color.

Your potato vegetable kugel was a huge hit in my house over shabbos! We wiped it out. The vegetables, especially the red pepper gave it such a great flavor. Thanks so much for sharing it! Very Happy

embarrassed I'm so sorry I just saw this now - busy with pesach. Hope it's not too late!!

Apple Kugel

Yields: 9X13

7 Apples, grated
1 C. Sugar
3 Tbsp. Lemon Juice
1/2 C. Potato Starch
1/4-1/2 C.Oil
5 Eggs, Seperated
drop Cinnamon optional
drop Vanilla extract optional

Mix egg yolks with 1/2 cup sugar, lemon juice, potato starch and oil (add cin. and vanilla if using). Beat egg whites with other 1/2 cup sugar. Pour yolk mixture into whites slowly. Add grated apples until just mixed.

Pour into 9X13 and bake at 350 for 1 hour. Freezes really well.

Note: This is a really airy apple kugel - also it will fill to the top of the 9X13 don't get scared that's how it's supposed to be, it's a really high kugel

Pinapple Kugel

4 Eggs
1/2 C. Oil
1/2 C. Sugar
4 Tbsp. Potato Starch
1 Tbsp. Vanilla Sugar
1 tsp. Baking Powder
1 20 oz. Can Crushed Pineapple, Drained

Mix all ingredients except pineapple well. Add drained pineapple and mix. bake in 9" round pan at 350 until golden, aprox. 45 min.

Delicious hot or cold.


Sorry can't find my tricolor kugel this year, must have misplaced it so I'm making a veg. potato kugel instead.

Apple Matzo Kugel

5 lg apples (any kind)
Innamon and sugar
3 eggs
1 C matzo meal
3/4 C sugar
1/2 C oil

Grease bottom of pan ( I used 9x13)
Peel and slice apples, place in pan and sprinkel with cinnamon and sugar.
Combine eggs, matzo meal, sugar and oil and mix well. Pour over apples and bake @ 375 for approx 35 min or until browned.
