I"ve done it before. It's okay. I think it tastes better with parve hot dogs though.
My basic recipe.
Onions, barely, beans, potato. I add teh tofu or parve hot dogs right before Shabbos, but the hot dogs I take out early in the day so they are defrosted. It's yummy and the leftovers get eaten since no one around here wants to be basari for a potato and some barely (all the meat is usually gone on Shabbos).

fish123 = what other ingredients besides portabelo mushrooms do you recommend. Any good recipe using tofu?

We always put in pearl barley, cholent mix bag of beans, dates, bbq sauce, onion soup powder, potato and tobasco- its the best!

I confess I tend to use veggie burger more than tofu.
But you should use the firm tofu not the soft/silky ones (otherwise
it will crumble). It should help if you either press tofu (place between
two plates and put weight on top) or fry it first in sesame oil
to get rid of excess water.
I heard of someone making kishke/cholent dumpling with
mashed tofu but haven't tried it myself.
fish123, I also add a few dates in my cholent. Yum!

My mil does that now that she moved from out of town to very out of town and there's no kosher shop (but a huge bio shop with tofu etc).

I used it with "meat" crumble - it was awesome. I make it when vegetarians come over. But I tend to make the flavors more like chili than cholent. If you're interested, I can give you the "recipe."
