Weight Watchers Shavuos ideas ?

Anyone following weight watchers but still wants CHEESECAKE ????? thats me !!!

does anyone have any recipes / menues that could work for a yummy shavuos but are still point friendly ?

I don't know from points but I know from diet.
here's one, not that sweet but edible.

No crumb cheese pie.
500 grams no fat cheese of any kind
three eggs of which only two yolks.
artificial sweetener and if you don't use anything artificial then two level tablespoons of sugar or honey or something like that.
Three tablespoons farina (solet in Hebrew)
tablespoon baking powder

Mix.
Bake until it looks dead.
Meaning browning.
If you want it to be a bit more fattening then separate three eggs and beat the whites with two tablespoons sugar, add three tablespoons flour and one tablespoon baking powder and fold it in, bake for 20 minutes at 350 and then take out and watch it fall. That's the base. Pour the cheese mixture on to it and then bake something like another 30 mintues, maybe more.

It's not great but it passes for cheesecake for someone who hasn't had cake for a few months.

yes - I would love to see how to make a healthier / low fat eggplant parm. -- last year we made it without frying but it will still very high in fat ....

thanks everyone for your ideas !!!! I may just have a cheesecake shavuos afterall Smile

2 medium-small sized eggplants
eggs
flavored breadcrumbs
12-16 oz. shredded cheese
marinara sauce

To make it more dietetic, I use the fat free/lo cal marinara sauce. Also, I mix in a nice amount of water with the eggs for breading. And finally, I use the lowest calorie/fat cheese (they sell reduced fat etc...) Also use closer to 12 oz rather than 16.

peel and slice eggplant, either way, in length or in circles. Egg and bread them. Spray a few cookie sheets and layer the slices that there should be no open spaces left on the bottom of the sheet, pieces can and should overlap a bit. Spray again on top. Put into a 400 degree oven for about 20-25 minutes, or until lightly brown, NOT CRISPY, just cooked. Wait till slightly cool, so you don't burn your fingers (as I have done multiple times when in a rush). In a 9x13 pan layer one of eggplant, again with no pan showing thru, overlap or tear pieces to make it work. Pour about 1/4 to 1/3 of the jar marinara sauce over the layer and spoon smooth. Then sprinkle a layer or either the cheapest or lowest fat shredded cheese. If I buy two packages of 8 oz. cheese, I try to buy two types like cheddar and mozzarella, or muenster etc.. keep layering until you run out of ingredients. Make sure to have the cheese as the top layer. Bake in a 400 degree oven for about 45 min- 1 hour or until the cheese is bubbly and brown.

It's very good and filling and it only needs a salad or some green beans for a side dish. Maybe a soup as well.

Very easy and not so fattening:
Layer in a 8x8 pan (or double in a 9x13 pan)
cornflake crumbs
peeled eggplant sliced thinly
cornflake crumbs
pizza sauce
shredded cheese.
repeat until all the eggplant is used up (about 3 layers).
Finish with eggplant covered in cornflake crumbs.
Bake tightly covered for 1 1/4 hours.
Uncover and pour ontop
8 oz. tomato sacue
2 tbsp. oil
1/3 cup sugar
mixed together.

Bake 15 minutes uncovered at 400.

It is very very good.

SORT OF LOW FAT DAIRY CHEESECAKE - from the Baking Sheet
Graham cracker crust or 8 whole graham crackers mixed with 2
tablespoons brown sugar and 1 tablespoon of melted butter or margarine
Crush crackers in food processor in plastic bag with rolling pin.
Stir in the sugar and butter or margarine. Press into 9 inch pie pan.
Filling: 2 eggs, one package cottage cheese (no fat or low fat)
1/2 cup sugar - or less
1 tsp vanilla
1 tsp almond extract
2 tablespoons lemon juice
Mix everything in food processor blender and pour into crust. Bake
for 45 minutes in oven with a pan of water on the lowest oven rack if
you can.
