I want to make them for Shabbos. Not stuffed with meat, and obviously not with cheese. Anyone?

Heres one-
take off the stem of the mushroom and finely cho it with an onion and a clove garlic sauté for a few minutes then mix in a egg some bread crumbs, salt peper and parsley, stuff the mushrooms and bake for about 20-30 minutes at 350.
my HB loves these!

Mine are quite similar. I also brown the caps in evoo, for a few minutes, then do basically the above and fill the caps and bake.

Quick and Kosher has a recipe that tastes delic and is very easy bec there is no sauteeing.
1 10 oz carton whole white mushrooms
2 tbsp bread crumbs
2 tbsp olive oil
1/4 tsp oregano
1 tsp crushed garlic
1/4 tsp salt
1/8 tsp black pepper
Preheat oven to 425
Clean mushrooms and remove stems. Place mushrooms round side down in a 9x13 pan
Chop stems. Add rest of ingredients. Mix.
Place 1 tsp of mixture in each mushroom.
Bake uncovered at 425 for 15 minutes until topping is slightly browned.

I don't know. I've only served Friday night. I warm in my oven and then before shabbos I place on my crock pot to keep warm.

I think the amount of time that it would take to get the kugel filling to cook would leave the mushroom over cooked.
