Brownies (from Baked)

Fudgy and delicious (no mixer needed)

1 1/4 cup flour
1 tsp salt
2 T. dark unsweetened cocoa powder
11 oz dark chocolate
1 cup ( 2 sticks) butter or margarine
1 tsp instant coffee
1 1/2 cup sugar
1/2 cup brown sugar
5 eggs, at room temperature
2 tsp PURE vanilla extract

Preheat oven to 350 degrees. Grease sides and bottom of a 9x13" pan.

In a medium bowl. whisk together flour, salt and cocoa powder.

Put the chocolate, butter and instant coffee ina large metal bowl, set over a pot of simmering water, stir occasionally, until the chocolate and butter are melted and smooth. Turn off heat, but keep bowl over pot of water and add sugars. Whisk until completely combined, then remove from the pot. The mixture should be room temperature.

Add 3 eggs to the chocolate mixture and whisk until combined. Add the remaining eggs and whisk until combined. Add the vanilla and stir until combined. Do not over beat the batter at this stage or the brownies will be cakey.

Sprinkle the flour mixture over the chocolate mixture. Using a spatula (not a whisk) fold the flour mixture into the chocolate until just a bit of the flour mixture is visible.

Pour the batter into the prepared pan and smooth the top. Bake in the center of the oven for 30 minutes (I needed to bake it for 35) or until toothpick inserted into the center of the brownies comes out with a few crumbs sticking to it. Let the brownies cool completely, then cut into squares.

No, I don't know if this will work with oil.
