I have a veggie quiche recipe that I can get for you in a few hours, it involves a pre made pie shell, bag of frozen vegies and a few other basic ingredients.

sounds good, I'd like to try that - DS is allergic to dairy, I am allergic to fish. Ds is also allergic to eggs, can I use egg replacer?
Thanks

I don't know. a quiche is basically a crust, a vegetable and a binder. here the binder involves eggs and mayonnaise and liquid, don't remember exact amounts. will egg replacer harden if baked or scramble if fried?

Not so long ago I made a corn quiche that had no dairy. My kids even ate it!
I am pretty sure I posted it on this site. I will go look.
I would think you could use other vegetables in it, if you don't like corn.

preheat the oven on the highest (usually 500 degree or 450 if that is your highest) put the eggs in a bowl and stir it well with a fork. use the slicer blade to cut the squash. then grate the potatoes with the kugel blade- the one that grates will into smaller peices. add a few tablespoons oil to the eggs and mix a little. then add the mixture from the food processor to the bowl. add some salt- maybe a tablespoon. mix it and pour it into a lined bekele- baking pan. don't buy one that is too big- sorry I don't have one here so I can't give you exact measurements- say a little less than half a roaster. probably like seven inches by eleven? (and you can play around with it . take off one from something or add. I never do it from a recipe book)
any more info you need tell me.

ingredients:
six potatoes
three squash
four eggs
lined cookie sheet
few tablespoons oil
tablespoon salt

I forgot to add this- if you want to feel more the squash taste as opposed to the potatoes you can add two or three more squash and one egg.

Zuchini Quiche
Cook 2 squash (I boil in water)
Mix in bowl:
1 onion diced (sauteed - I sometimes put in without sauteeing)
2 eggs
1 tbsp sugar
3/4 cup breadcrumbs
1/2 can mushrooms (sautee with the onions if sauteeing)
garlic, pepper, and salt to taste
Add mashed zuchhini
Pour into frozen pie crust (deep dish pie crust is a good size, otherwise it will be too much filling)
Bake 1 hour at 350
