Cream filling and ganache that don't require refrigeration

Anyone have any ideas? Here is the cake it's for:
One batch doctored up Duncan Hines cake (add mayo, pudding), which you can make in a 9 x 13 and split, or, as I do, make in 4 eight inch pans, giving me 2 eight inch cakes. I then put in a marvelous cream filling (to follow) and cover with ganache. I want to make this cake but it can't be refrigerated, so I'd love suggestions for a filling, preferably vanilla, and icing.

Ok, here's the filling: Whip one 8 ounce carton well. Dissolve 1 - 2 teaspoons coffee powder in a small amount of vanilla, stir into brown sugar (don't remember if it's half or three quarters of a cup), then stir into the whip.
