SCD legal cauliflower, just like mac-n-cheese !
I made this with cauliflower and it's absolutely incredible!
Here's what I did:
2 packs of frozen cauliflower, put it in a bowl still frozen, IN THE PACKAGING into the microwave about 35 minutes on high, or cook in water and drain.
In the meantime, in a pot:
a few heaping tablespoons butter
1 leek chopped
3 minced garlic cloves
a package of Monterey jack cheese (or any legal kind you like)
salt
Let this cook on a small flame until the leek is translucent.
Pour over cauliflower.
Eat as is or bake for a few minutes until the top is golden.
NOTE: I didn't have a bowl big enough to pour over the cauliflower so I added the cauliflower to the pot and mixed for a minute.
