OK so my husband came home with this strange looking thing.
No idea what to do with it.
I assume I cut off the green stuff, throw it in a pot, but for how long?

Depends what you plan to make with it.

I throw out the green, cut the white lengthwise, separate and clean it. Boil in a pot of salted water till it is soft, then throw it in the food processor, add eggs, flour, and pepper, and make latkes out of it.
