I want to use strips of chicken breast, carrots, onions, peppers, mushrooms (anything else?). What marinade should I use? What's the best way to cook it all? I will be reheating it for friday night, so I guess I want it a bit crunchy when I first make it.

start with onions and garlic. add everything else. I like to just add soy sauce, you don't really need a marinade. duck sauce would be good too. basically anything you like on chicken.

I make this sauce all the time.
STIR FRY SAUCE
Cup to 1 and1/2 cups chicken stock (Can use water with powder stock)
4 tablespoons soy sauce
1 heaping teaspoon sugar or splenda
Garlic
Ginger
2 tablespoons corn flour
Mix and add to stir fried chicken and vegetables.
Let boil and thicken slightly.
Can adjust soy sauce and spices to taste.

you should add the peppers when you reheat it on friday - then they will stay crunchy ...
also what about a pineapple stir fry - you add some cooking sherry and a can of pineapples ... I have a more detailed recipe if you need it ...
I love using baby corn or adding mushrooms ... depending on what you can get hold of ...

I tried it a while back and we weren't too impressed with it. Maybe I'll try it again...otherwise, I'll try Rosegarden's recipe.

Sounds really delicious, but no duck sauce or sherry (and can't get any).
Oh, and I cheated. I used frozen peppers and mushrooms which ruined it a bit, but too bad... I have my limits...

Fed 40 and they were all raving about it too! Even my Dh, who NEVER touches stir fry, loved it. I'm thinking of heating up the leftovers for myself now...

Corn flour and corn starch are the same thing. Just depends were you live...

You should be able to substitute regular flour just be careful it doesn't go lumpy when you mix it in.
